These healthy little muffins were a big hit with the kids!
- 5 eggs
- 1 cup applesauce
- ½ cup coconut flour
- 2 TBSP cinnamon
- 1 tsp baking soda
- 1 tsp vanilla
- ¼ cup coconut oil
- 2 TBSP honey

We are on vacation this week so our blog is short and sweet :) These healthy little muffins were a big hit with the kids! Mix together
Mix well with an immersion blender. The kids love this awesome cooking tool and it is a great exercise in strengthening the small muscles of growing hands. After blending, gently stir in 1/3 cup chia seeds for extra omega 3's and healthy fiber. Spoon into mini muffin pan (we used 2 spoons so the kids would cross the midline of their body and increase their brain building coordination skills - it also prevents some of the finger licking that can occur with kids' baking!) and bake at 400 degrees for 10 - 12 minutes. The kids LOVE the new water table! Thank you so much to all the families who contributed!! Soil Paintings! Mud Sculptures! Spring Flower Planting... We saw a huge dragonfly on the collard greens! Sweet friends learning about bugs... Invisible ink! Newtonian slime! The kids planted these purple beans in March and now are enjoying them as a daily snack - so sweet and crunchy! See you next time!
